Our first stop of our Rhine River cruise after departing Amsterdam was in Kinderdijk ("Kinder0dike"), home of dozens of windmills build in the 1400s to remove water and reclaim land in the Netherlands. These amazing machines, still in working order, feature advanced engineering and helped keep the land dry behind the dikes of the country. We had the opportunity to tour the inside of one of the windmills that was operating that day and got to see the inner workings of the mill and the living quarters of the owner / operators. We also learned how vulnerable these ancient structures are to fire as they are constructed completely of wood. By necessity, any activity that needed heat by fire - such as cooking meals - had to be performed in a separate, more fire-proof structure, Hence the kitchens were separate buildings, built of brick a safe distance from the windmill and used by the family for their meals.
